On weekdays the lights come on low around seven, and the first pot goes down before the block wakes up. Early is the best time to come.

By nine,it is full.

Regulars in their usual seats, one newspaper going around, bakes coming out until the tray is empty. We do not rush anyone to the counter, and we do not clear anyone out.

We closeat two.

We tidy up, and the room sits empty until the next morning. Sundays we open at nine instead of seven. The story here is made up, but that is the idea.
